Energy balls are a nutrient rich, energy dense ‘cookie ball’ that actually tastes good! I love putting these out with Christmas baking or mixing up a batch for on-the-go snacks! This recipe comes from “Whitewater Cooks at home” but I make them a bit different each time by adding anything I find in my cupboard. The beauty of these is that you don’t have to bake them either! For an enhanced flavor, try toasting the seeds if you have the time.
Mix all ingredients together. Add extra honey if necessary to bind. Roll into balls (these are rich so make them small). Store in fridge up to 1 week or freezer up to 2 months. I like eating/serving the balls frozen, I discovered this while attempting to hoard them and hide them from my husband in our freezer. They literally take under 5 minutes to make, and my 2 year old can actually help with the mixing. Fool proof, easy, fun!
