Chocolate Pudding, Paleo Style!

Our momstown Milton Junior Chefs celebrated Valentine’s weekend with a delicious chocolaty treat that is healthy too!

Dr Erica Robinson and I had a great time making some delicious and nutritious chocolate pudding with our momstown Milton Junior Chef’s today!

I remember the first time that I saw a recipe for chocolate pudding made with avocado…I have to admit, I was more than a little sceptical. I love avocados, but couldn’t imagine them making a decadent dessert. After giving the recipe a try, I was absolutely blown away by how delicious it was. I am always looking for ways to get healthy food into my kids while eliminating unhealthy foods…and this recipe fits the bill!

Here is more or less the recipe I used at Friday’s event. I made a few changes based on what I had on hand and my children’s preferences. I have noted my modifications in brackets. I hope that you enjoy this silky chocolate pudding as much as our Junior Chef’s and Mama’s did! We served this with fresh fruit as a special Valentine’s Day treat.

Dark Chocolate Pudding

Yield: Serves 4-6

Prep Time: 10 minutes

Cook Time: 3 hour Chill Time

Total Time: 3 hours 10 minutes

Deep dark chocolate pudding that is made with a secret ingredient…avocados!

Ingredients:

  • 1 cup unsweetened almond milk (I used chocolate coconut milk – It’s what my daughter likes to drink)
  • 2 ripe avocados, peeled and pitted
  • 1/3 cup plus 1 tablespoon unsweetened cocoa powder
  • 1/2 cup plus 2 tablespoons pure maple syrup
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon ground cinnamon (Cinnamon?! – Scratch the cinnamon)
  • Pinch of sea salt
  • Raspberries, for garnish
